This is my second try of recipes in the book Simpol by Tatung Sarthou.It is called Sweet and Sour Pork. It is pretty easy to follow his recipe. One thing though, I didn’t have carrots inside the ref so I substituted two medium-size potato, fried it after frying the pork. It tasted just as good as those I have tasted before. The pineapple chunks balanced the sweetness of the sauce. It’s flavor is just perfect. No garnishings yet, I took the photo direct from the steel wok.I am tempted to try another recipe, it’ll be chicken next time.

As soon as the door opens,

She does cartwheels

Then reach out her two front paws

She wants a cuddle

That’s our lovely Cookie.

Oreo comes next

Burying his head on my lap

A few back rubs is enough.

Noki gets jealous at times

He wags his tail

But Oreo barks at him

A bigger dog that he is

He just keeps quiet

Trying to say, “give me a few moments please”.

When it’s just the two us

He raises his four paws

Up in the air

Swooning over a few touches.

They say dogs are man’s best friends

Certainly, I do agree.

We are almost in the middle of the month and before we know it, January is gone.

Oh my, I missed this blog for three days. Kind of not inspired enough to blog. And to my blogger friends, I am sorry for not even commenting on your posts. Trying to catch up.

I joined Goodreads Reading Challenge again this year. I committed myself to read another 100 books. It is really a challenge for me finishing that much for the year. Started with a historical novel, two books which are some kind of a series, a paranormal story and a thriller and courtroom scenes by Connelly. I found a book about dogs too. The cover was just too tempting because the pictures looks like our dog Noki. It’s my sixth read.

How are you getting along with this Covid environment? Funny how the department of health prefers the vaccine from china which is more expensive and not as effective. They are letting the local governments procure their own and the latter prefer Pfizer. I wonder if they’ll have enough facilities to restore those vaccines.

Finally done gardening yesterday. A back-breaking job but it has to be done.

I bought five pieces solar garden lights but for the past two days we didn’t have enough sunlight to charge them fully. They need at least eight hours in full sun. Sayang! I am excited seeing the garden illuminated at night.

Jovy told me last night not to cook anymore for lunch because they ordered lechon pork belly. It’s the latest craze now here but we haven’t tried it yet. The belly is tied like a roll and cooked slowly in charcoal. They marinate it first before grilling.

It was only yesterday that we said goodbye to some food we had for New Year. I ordered dried fish online and milkfish from the vendor who passed by yesterday and made them into daing na bangus. Yummy dish paired with sliced tomatoes and boiled sweet potato leaves.

How was your New Year celebration? Do you still make New Year’ resolution. I don’t anymore but I promised myself to read another 100 books this year. Done with four.

Second to rice, pancit is a Filipino noodle dish which is also a staple on our table. It uses rice sticks mixed with pork, shrimp, chicken and vegetables. We even mix it with sliced hot dogs and chicken liver.

I prepared this for lunch today and followed Chef Tatung’s recipe by adding sliced squid balls to the pork. Veggies are half-cabbage, Baguio beans, carrot, celery and green onion for toppings.

You could eat this as substitute for rice. Yumyum🥢🍜🍷

I’ve alway been a fan of Chef Tatung Sarthou. I often see him on television with his regular segment in one program of ABS-CBN.

I occasionally catch him on his Facebook page showing those recipes that he cooks. They don’t need elaborate ingredients. They are simple recipes so easy to follow.

Last Sunday I decided to order his first published cookbook last November 2020. Delivery was fast, ordered it through Lazada.

He calls it Simpol which means simple in English. The book is thick, the pages are glossy with picture of every recipe featured in the book. I browsed it and it seems they are so easy to follow. He simplified those elaborate recipes and made the ingredients affordable. One of these days, I will try some of them.

This book is one more treasure to keep.

Crazy Covid


Last night a relative from UK called me up and told me about what they went through first week of December when four of them, she, her husband and two kids were found positive with Covid-19. She got the worse case, she had fever for more than a week, hardness of breathing, tastebud was nil, she kept coughing. She thought she would die. She was crying while narrating her experience with Covid.

“God is merciful”, she said. She held on and spent her time praying while she was isolated. It was the hardest challenge she had to face.

Like cancer, Covid is crazy. You’ll never know if you will live or die. When you are given a second chance at life, everything is a blessing.

It was a joyful but quiet celebration of meeting 2021 finally. Although firecrakers are prohibited during the general community quarantine, for a few minutes before the new year started and a few minutes after, it was so noisy outside. By 1 am, everything was so quiet.

Mom and I are alone in the house. Josef, Jovy and our two pets spent the new year with Jovy’s grandma. They will stay there until Sunday.

Here’s our simple lunch: a healthy veggie salad with mayo/garlic/vinegar dip, slivers of cheese and thin slices of crisp apple, two rolls embutido and baked macaroni. Blueberry cheese cake and brownies for desserts. Heaven🍎🥒🥬🧀

Turning a new leaf in the calendar of life, another 365 days to make life more meaningful.
