I love sweet potato. Locally, we call it kamote. Every time we go to the market. I always buy kilo or two. I love it any way it is cooked. I usually just boil it to maintain the flavor.
Yesterday, I had this for breakfast with two medium-sized sweet potato. I made some slices into fritters and the rest I grated and mixed it with grated cheese, one egg and a cup of corn flour with a pinch of ground pepper. There was no need to add salt since the cheese is flavorful. Had two spoonfuls of mayo dressing as dip.
Sometimes I add slices of sweet potato to pork or chicken afritada instead of using potatoes. Sweet potatoes are an excellent source of vitamin A. They are also a very good source of vitamin C, manganese, copper and vitamin B6. Additionally, they are a good source of potassium, dietary fiber, vitamin B1, vitamin B2 and phosphorus.
I planted sweet potato vines here in our small garden which I use for our famous sinigang. I harvest the young stems every two weeks.

Wonderful. I too love sweet potato. I either boil them or bake them with a drizzle of oil, salt, honey and chilli fllakes. Tastes yum 🙂

We do eat sweet potato, but personally I prefer new, ordinary, potatoes.

I have had sweet potato baked, fried, and mashed. It is fairly popular here, but I think most British people still prefer our usual white potatoes. Sweet potatoes are also very hard, and I find they need a lot longer for cooking. When I was young, you never saw them for sale here, so they are a relatively recent addition in the shops.

You could find sweet potatoes anywhere here Pete even in supermarkets. Speaking of potatoes, I like potato marbles. I usually baked them in olive oil with a little salt to taste.

Love them! I can’t eat nightshades (which I love, and which include white potatoes), so I really enjoy sweet potatoes…I just microwave and dig in! We’re also eating our garden squashes now, so my Vitamin A level is great.

Yes! I make a stir-fry with sweet potatoes, broccoli, shiitake mushrooms and buckwheat soba noodles. Yummy. There are so many delicious ways of preparing them, with an option for just about any taste. 😊
